No extra Dutch three-star restaurants

Published on 23 November 2010 - 8:52pm
More about:

There are still just two three-star restaurants in the Netherlands: Oud Sluis in Sluis and De Librije in Zwolle. Nine Dutch restaurants gained a Michelin star for the first time, but there were also Dutch losers.

Besides the two highest graded premises, the Michelin guide to the Netherlands 2011 lists 13 restaurants with two stars and 83 with one star. The establishments which gained a Michelin star for the first time in the latest guide are spread all over the country.

Michelin stars depend on how five criteria are met: the quality of the product, cooking techniques and flavours, how the chef’s personality comes across in the dishes, the relationship of price to quality and the performance consistency over time and across the range of the menu.

I find this both interesting & amusing .If you are over 40 & well-traveled you will know that it a relatively new possibility to find good food not only in Nederland , but England , Ireland...& Scandinavia as well.
It has only been about the last 15-20 years or so....since the recent affluence (due to gas discoveries in the North Sea ) allowing more people to travel ....study cooking . and wide -spread computer use has also played its part in improving the cuisine in those places. Prior to that it was only Indonesian / Chinese food that saved the day. The current youth may not recall when the usual meal consisted usually of hard meatballs with fat gravy , potatoes, cucumber, & if you were lucky....a butter lettace salad & vla for dessert. Big variety salads were not to be found ...nor were avacados, Mexican food , pizza..enz. Wine was rare.Of course one could get some great bread & desserts at a bakery, but the average person did not bake anything & often did not have much of a kitchen. I know this for fact....I lived there & saw how people were eating from before the war to the late 70's...It did not vary much at all in that time except during the occupation when any food at all was rare. I am delighted they have come a long way . If you travel there today ...you will be glad also. No need to eat any more bitteballen or kroketten..... Eet smakelijk !
